In a country famous for strong, dark robusta, Mai Vu set out to prove Vietnamese highland arabica could stand beside Ethiopia and Kenya on the same shelf. The slow bar is her laboratory: every origin weighed, timed, and temperature-locked, so the coffee does the talking — calmly, precisely, and without shortcuts.
